Fresh, bright, and super!

We’ve entered the growing season and God’s bounty of harvest is available. Fresh vegetables and fruit abound to fill our plates with healthy nutrients. Today’s message is a reminder to think fresh, bright, and super.

There’s a reason spinach is Popeye’s superfood.

The great thing about spinach and other dark, leafy greens? Low calorie spinach has iron; potassium; vitamins A, C, K; folate; manganese; and fiber. Spinach is a superfood! (And so are kale and other dark, leafy greens)

This week I’ve enjoyed a spinach salad every day. I topped with a variety of healthy things–carrots, red bell peppers, strawberries, blueberries, and walnuts (also packed with healthy nutrients).

Are you partial to lettuce, rather than darker, brighter greens? While lettuce is somewhat healthy, it doesn’t contain the extent of nutrients found in spinach or kale. Perhaps if you can’t take the total leap to spinach, trying substituting spinach or kale for part of your lettuce. Remember to go easy on the dressing.

Go for fresh, bright, super!

Not to throw a damper on the bounty of spring–remember to eat fruits and veggies as close to their original state (fresh) as possible and be careful of adding sugar and fat during food preparation.

  1. I used to despise spinach because Mom bought the chopped and frozen (affordable) variety to feed her six children. After tasting fresh spinach for the first time (with no idea what it was), I’ve never looked back. Love it in my salads too!

      I love spinach most every way it is prepared, although I’m kind of with you on the chopped frozen variety (it does make a good dip, though). It’s great that we enjoy something as healthy as spinach. Thank you for being a good role model for healthy eating (minus the peanut M & M’s). I’m smiling, of course, because I love peanut M & M’s, too. But if we eat spinach, a few M & M’s are okay, right?

  2. I recently started making salads with kale and then adding whatever I happen to have on hand. So far, all have been yummy!

    I too love fresh foods, and spinach is among my favorite. Learned recently that okra is good for diabetic folks (not the breaded kind you so often find), so I’ll be looking to eat more of that this year too. Thanks Ms. Katherine.

      We’re nearing the end of strawberry season here in the mid-South and looking ahead to blueberries. Like you, I’m grateful we can find fresh fruit and vegetables year-round now since it’s possible to enjoy the bounty of fruits and vegetable grown in the southern hemisphere here in the midst of our winter season.
